The Fromagerie du Bairsou , located between Trois-Ponts and Stavelot , was established in 1998. In 2014 , it became a cooperative in which local farmers participate directly. They do more than just supply the milk: they also set the price and quality standards together with the cheesemakers.

Benoît Robert produces cheeses there using raw cow's, goat's, and sheep's milk . Everything is processed and matured on-site, in their own cellar. Some cheeses receive an extra touch— honey, thyme , or edible flowers —also sourced locally whenever possible. Production is carried out with respect for the environment, notably through the use of wood heating and an independent wastewater treatment system .

Among their products are cow and goat tomme cheeses , blue cheese , raclette cheese , Tomme de Stavelot , Val de Wanne in various varieties, as well as other dairy products such as butter , maquée (a soft, fresh cheese), and yogurt . This is a company that focuses on clear choices and fair agreements between farmers and producers!
